A classified OutPost recipe rooted in an ancient Caribbean tradition — chicken slow-braised in a generations-old jerk marinade of scotch bonnet, allspice, thyme, and dark spices until the meat is fall-apart tender and soaked through with deep, complex heat. This one came a long way to get here.

Born in the highlands of Jalisco, Mexico, birria was originally a celebratory dish — slow-cooked goat stewed in a complex red chile broth to feed entire villages at weddings and festivals. Our version honors that tradition with beef braised for hours in a hand-blended sauce of guajillo, ancho, and pasilla chiles, layered with cinnamon, clove, cumin, and charred tomato. The result is deeply rich, fall-apart tender meat with a broth so good it became the dip.

This one doesn't apologize for anything. Inspired by the bold street food markets of Oaxaca where vegetables are treated as the main event — not an afterthought — we char our peppers and onions over open flame, slow-cook seasoned black beans with cumin and smoked paprika, and finish with a silky avocado crema and house fire-roasted salsa that has more layers than most meat dishes. Plant-based done with full conviction.
